✔Better say: My mom is a very loving and committed person who always thinks about our family. She makes a lot of food / She cooks a lot and spends a lot of time with us, so I'm grateful for that.

✖You said: My dad is not talkative, so it's very hard to know he feel and how he think, but I know he's very kind person. It's good to know my dad is kind person.
✔Better say: My dad is not very talkative, so it's hard/challenging to know/understand how he feels or thinks. But I know that he is a very kind person. It's reassuring to know that my dad is kind.
